Congratulations Reverend Paula
Paula and Bill....Cheers to the next chapter!
After three grueling years of back and forth travel from Colchester to Boston, long hours studying, demanding coursework, writing papers, taking exams, preparing sermons, participating in a variety of internships and field experiences, defending her thesis, my dear friend Paula graduated from the Andover Newton Theological School, with a Master in Divinity, in May of 2010. The summer was spent in an intensive, emotional, and exhaustive job search, which landed her an Associate Pastor position at the Laconia Congregational Church in Laconia New Hampshire!
I am so proud of her and so happy that she has realized her spiritual, professional and personal goals! My feelings, however, are bittersweet. Even though I am so happy for her, I am so sad to see her leave Vermont.
She is back commuting...this time from Burlington to Laconia...only returning to Burlington for a quick two day turnaround. Just enough time to touch base with her family and to see friends. Then she is back in Laconia working with the youth of her Church and leading the congregation in their individual and collective spiritual journeys. As soon as their home sells in Vermont, Bill and Paula will take up residence in Laconia.

Paula's ordination takes place on February 6, 2010. We will be in the congregation that day with bells on....
Happy Birthday Helen!
It was Helen's birthday and Julie, Deb, Gail and I treated Helen to a lovely dinner at the Green Room in Burlington! Thanks so much Julie for the fabulous venue idea....you always come up with the most fabulous restaurants. We are so fortunate that Burlington is just filled with the most wonderful culinary experiences -
As always, the evening was filled with fabulous food and friendship. We caught up on eachother's lives, opened wonderful gifts, and enjoyed the most incredible food....I was trying to look through my pictures to post just a sample dish or two of what we enjoyed that evening, however, every single photo was just amazing! It was so difficult to choose which entree to post! So, in order to do the evening's food complete justice, I just had to post it all. Mussels, crab cakes, sashimi, quesadillas, bruschetta, luscious soups, sorbet....... oh my!!!... Scroll on down and you can see why we were in foodie heaven. :-)
Another highlight of the evening was learning all about Helen's new toy - her IPAD - and viewing the most gorgeous photos of her recent trip, with Eric, to Hawaii. What gorgeous islands....given the weather in Vermont, we were in tropical heaven via her IPAD.
Happy, happy, birthday Helen! Cheers to many, many, more celebrations with your girlfriends!
Bryan's birthday...#22
Happy Birthday Bryan.....22 big ones!
We had a lovely day on January 10, 2011. So many wonderful birthday wishes, both in person, on the phone, in the mail, and over the internet...wishing Bryan the best possible day!
Bryan spent the day working ;-( however, he did spend the evening celebrating! :-)

Thanks to Dad, the theme of the 22nd birthday centered around Stanley tools! In June, Bryan will be relocating to the Washington DC area ... more on this exciting news in a later post! The tools will clearly come in handy - Oh and Bry....the tool belt will be coming soon! ;-)
A dinner at the Windjammer with Mom, Dad, Catherine and Joe to continue the celebration....complete with a heavenly Ben and Jerry's ice cream cake!
A few days later the birthday celebration continued....with the annual fried shrimp dinner .... lovingly prepared and served by Bryan's Grandma King. This meal is a time honored tradition in Bryan's life....a meal that he loves and looks forward to at each and every birthday!

Add homemade coleslaw, Bryan's favorite rice, and Grandma's famous tartar sauce and you have the recipe for an incredible birthday shrimp dinner.

A Re-Cap of Christmas Day - Vermont 2010
.....the actual Day is behind us now....and we are well into the month of January. We all had a lovely Christmas with family and friends and the whirlwind buzz of the last few months has settled us all down into a calm, laid back, state of ZEN! :-) While we anxiously await March 1, (psychologically, this is the date that signifies the end of winter and the hope of longer days, more sunshine and warmer temps!), I thought I would catch friends/family up on the events of our Christmas holiday.
Bryan, Eddie and I spent Christmas Eve and Christmas Day with my mother, my sister Susan and her husband Craig from Connecticut, and my niece and her boyfriend - Kristen and Greg. Christmas Eve was spent at my mom's in Shelburne. My sister Sue and her husband Craig arrived from Connecticut mid afternoon and then we all went to the Children's Mass at St. Catherine's Church in Shelburne. What a treat to see all of the little ones participating in most aspects of the Mass. It brought us back to earlier memories of when Bryan enjoyed the re-enactments of the birth of Christ and played the roles of angel, shepherd, a wise man, and fulfilling the ultimate gig of Joseph! It was retirement after that particular role....he had hit the high note, for sure! Anyway, the life and energy of the children in the Mass was fun and heartwarming. After Mass, we enjoyed a lovely dinner at my mother's home and then back to Colchester for an evening of wrapping gifts and "assisting Santa" in the delivery of presents! What a bounty!
Christmas Day....Everyone arrived at our home in Colchester - first to enjoy a lovely brunch, and then to later enjoy a scrumptious Christmas Dinner with the opening of fabulous Christmas gifts for all! My sister Susan is an accomplished cook and I always enjoy the opportunity to create a meal with her....and having my mom there to always be the best sous chef a person could ever ask for!!! She is always at the ready with a cutting board and a knife AND of course, her apron!
After all of the years of my mother creating delicious culinary masterpieces, she can now sit back and enjoy the fruits of our labor! Cheers... And what a dinner it was! The timeline of the meal became a bit hectic towards serving time and regrettably I forgot to take photos of the FOOD! Imagine that!!! Drats.... Anyway, just imagine , (in my most humbled opionion), the BEST roasted prime rib of beef, au jus with baby bella mushrooms, a baked potato casserole that was to die for - Thanks to Susan!, sauteed green beans with shallots, bacon and garlic, and a lovely creme brulee cake from our favorite patisserie, Mirabelle's. And I would be remiss if I didn't mention the Christmas cocktail of choice....pomegranate martinis! What a meal!
I did manage a quick photo of the ham and cheese strata that was served for brunch! Deeelish! This strata was baked in a springform pan and sliced - a lovely presentation.
The lovely strata was complimented by the incredible edible arrangement that Sue and Craig brought to brunch! Nothing like fabulous fresh fruit in the dead of winter....some of it (the pineapples and strawberries!) was covered in chocolate! YUM!
After dinner we all descended upon the living room and our Christmas tree for gifts and fun!

Craving Citrus.......
It is the dead of winter in Vermont. The amount of daylight has shortened, it's cold, it's snowy, and we are all suffering from a lack of sunshine! My intense craving for citrus surfaces around this time of year,
My dear foodie friend Mary re-introduced me to this "salad" last week and I just knew I had to make it. So....tonight, viola...my craving for citrus was clearly satisfied. This salad is absolutely delicious. I used grapefruit, and two varieties of orange. The salad is savory in that the dressing involves white balsamic vinegar, shallots, lime juice, tarragon, and honey. It is incredible!
This is the next best thing to hopping on a plane and heading to the Sunshine State!
